This seems really delicious. I think if a made it, I would use a mandoline and slice the cucumber paper thin, then shingle it on. I think you’d get the flavor and moisture of it without too much of a tough bite, considering all of the other ingredients are pretty soft (or in the case of the bacon, kinda crumbly)
I’ve done exactly that. It’s not worth it. Cucumbers are slippery. The fewer slices you have the better it stays together. If you want to maximize structural integrity then cut sheets of cucumber and weave them together.

I counter your cucumber shingles with soaking them in a little bit of balsamic vinegar, salt, pepper, and a pinch of sugar for 20 mins
